Coconut. Is there anything it can't do?

For the past year or so I've been buying decadent and delicious granola from my local organic shop, Choku Bai Jo. It's … very moreish. But I felt like something was missing. That something turned out to be Aldi's organic coconut flakes:


The coconut morsels make my daily muesli and yoghurt even better. And that got me thinking about coconut more broadly. It's very versatile! I use it (whether desiccated, shredded, flaked, powdered, in 'milk' or 'cream' form, as oil, or as part of another product such as condensed [coconut] milk) all the time.
