'Tis the season for absurd eating (let's make ice cream!)

It's the height of summer here in Canberra and the air is full of smoke from distant bush fires. We're reaching the end of December (a month of parties and excesses) and I'm thinking that January's household menu will need to be simple and healthy. One final splurge, though ...

Today I made some ice cream, featuring coconut and cacao nibs:

600 ml pouring cream (whipped by my wonderful culinary assistant, Andrew)
200 g sweetened condensed milk
50 g shredded coconut
50 g cacao nibs

Mix all together, pour into freezable containers, and freeze.


These two containers have a total capacity of around 1.7 L so I'd estimate the above recipe makes about 1.5 L of ice cream.
