As the alpharecipe challenge continues, I want to do a shout-out to haloumi (or halloumi), a semi-hard cheese which is delicious fried, grilled or barbecued. Growing up in a series of small towns in New Zealand, I was almost unaware of cheeses other than cheddar! I'd vaguely heard of camembert and Stilton (from a worldly-wise friend who described both as stinky) but it wasn't till I moved to Sydney almost thirty years ago that I discovered how many wonderful cheeses were out there. Blue cheese, feta and haloumi are now firm favourites. Sometimes served with avocado, which was another delight I discovered in the big smoke ;-)
There are a bunch of fabulous salad recipes, some featuring haloumi, here and there's a photo of one of my favourite haloumi salads here.
