Friday night treat ... teriyaki tofu

Fridays are a time for celebration. The working week is over. Yaaaay! Accordingly, I often cook something a little less than (ahem) nutritionally balanced for a Friday dinner. We can eat fruit and veges on  other nights of the week ...

Until our recent trip to Japan I didn't know how simple it was to make teriyaki sauce. Just five ingredients, and you can use it to flavour various different types of protein. Tonight's treat was teriyaki tofu:

400 g semi-fried tofu chunks
2 tablespoons soy sauce
2 tablespoons sake
2 tablespoons mirin
1 tablespoon sugar [the original recipe said 2 tablespoons but this works just as well]
2 tablespoons water
vegetable oil
spring onions

Halve the tofu chunks and fry them in vegetable oil. Mix the sauce ingredients together, pour over the tofu in the frying pan, and keep turning the tofu chunks until crispy and coated in the sauce. Garnish with chopped spring onions.
