Curry in a hurry

Did you know that my name (Karin) is only one letter different from the Malay/Indonesian word for curry, kari? How cool is that? After a stressful 2015 often characterised by illness and injury, and a very busy last couple of months, I'm hoping for a calmer and less frantic 2016. One of my goals for this year is to cook more spicy food, and more vege-packed delights in general. Here are a few of the things likely to appear on our household menu in the coming months ...

Sri Lankan lentil curry
Deconstructed samosas
Pumpkin and pea curry
Dal makhani
Chickpea delight
Tofu in lemongrass coconut milk
Potato and pea curry
Vegetable laksa
Pea and tofu soup
Thai green eggplant curry
Pumpkin, pecan and pomegranate stew
Lentil, cauliflower and sweet potato soup
Black pepper tofu with snow peas

All of these dishes are quick and easy enough to whip up after a hard day at the office and most can be frozen and defrosted later for an even easier week night meal. Enjoy!
