It's Day 19 of the alpharecipe challenge. While tootling around Japan almost four years ago we enjoyed a wide range of sake (Japanese rice wine) ... it can be quite alcoholic! Our train trip on the Seven Stars around Kyushu featured all sorts of local liquor, including a warm Japanese vodka made from sweet potatoes.
Anyway. Here are a couple of recipes that use sake (and yes, it is possible to buy cooking sake which, while still containing alcohol, is not suitable for drinking).
Japanese chestnut pumpkin simmered in sake
teriyaki tofu
