The Joy of ... Salads

It's summer here, at last. Salad season! I can remember a time when salads mainly seemed to consist of iceberg lettuce, tomatoes, carrots and maybe a bit of cheese. Fortunately they have become more exciting since the seventies. Here are some of my favourite flavour combinations ...

Spicy Thai Salmon and Lychee Salad

Tandoori Tofu (or Chicken) Salad

Chunky Guacamole Salad: avocado, spring onions, tomatoes, lime juice and optional chillies (makes a great wrap filling)

Rocket and Haloumi Salad: rocket, halved cherry tomatoes, olives, and sliced, fried haloumi cheese, sprinkled with a little balsamic vinegar

Crispy Bacon Salad: cos lettuce, camembert or brie cheese, toasted almonds, capsicum, tomato, avocado and crispy bacon

Other fun ingredients to put in salads include cucumbers, grapes, mango chunks, pomegranate seeds, bocconcini cheese, walnuts, basil ... indeed, anything that is fresh and delicious. Happy salad season to you, or if you're reading this in the Northern Hemisphere ... stay warm!
