Coconut risotto

This works as a breakfast or a dessert, and is gluten and dairy free.

Place 1.5 cups arborio rice and 2 cups hot water in a large glass container and microwave on high for three minutes. Stir and microwave for three more minutes on high. Add 1 cup coconut milk. Stir and microwave for three more minutes on high. Add 1 tablespoon of honey. Microwave for three minutes on high, stir and microwave for three more minutes on high.

Serve with fresh berries, a sprinkling of cinnamon and a sprig of mint.

Serves four. Leftovers freeze well for later lunches.
