Polenta (corn meal) muffins

 
People in North America seem to call these 'corn biscuits', but here in Australia a cookie is a biscuit and a mini cake is a muffin. Whatever you want to call them, these are very easy and rather moreish.

1 cup of wholemeal flour
0.5 cup of corn meal (also known as polenta)
pinch of salt
pepper, to taste
0.5 teaspoon of baking soda
1.5 teaspoon of baking powder
0.75 cups of milk
3 tablespoons of melted butter
1 egg

Mix and sift the dry ingredients. Add the egg, well beaten. Mix thoroughly and stir in the milk and butter. Put into greased muffin pans and bake at 180 degrees Celsius for about 15 to 20 minutes.
