Is it a salad? Is it a pasta sauce?

When my workmate Tom mentioned this dish to me I was a bit dubious. Warm lettuce? Sounded a bit odd. Anyway, he was so enthusiastic about how yummy it was, I had to give it a go. Delicious!

200 g pasta
50 g pine nuts
100 g feta cheese, crumbled
a few cloves of garlic, chopped
about 6 leaves of cos lettuce, shredded
splash of olive oil

Cook the pasta in boiling water. While it is cooking, fry the pine nuts and garlic in the olive oil. Just before the pasta is cooked, add the feta and lettuce to the garlic and pine nuts, and briefly fry until the feta is melting and the lettuce wilted. Drain the pasta and toss through the fried stuff. Serves two. Yummo.
