Zucchini, basil and feta fritters

It is that time of year again. People keep bringing their excess zucchinis [courgettes] in to work to share, and - as someone who hates waste - I feel obliged to use 'em up! Tonight's dinner was simple and delicious.

zucchinis, grated
basil leaves, roughly chopped
eggs
feta (I used Lemnos sheep's milk cheese)
wholemeal flour
pepper and salt

Mix all together, and fry spoonfuls in oil until crispy. YUM! Oh, and if you'd prefer a lower-carb (or gluten free) option, just leave the flour out, toss in an extra egg or two and make omelettes instead.
