Today my friend Liana asked whether I had any nice recipes for gluten free cakes. As it happens, I do ;-) Here goes!
250 g sugar
250 g ground almonds
Cover the (whole) oranges with water and boil for one hour. When cooked, cut up the oranges and remove any seeds and excess pith. Purée oranges. Beat the sugar and eggs together. Add the oranges and almonds to the egg mixture and fold together. Bake for one hour in a 180 degree C oven. (This works too if you make muffin-sized cakes and bake for about 40 minutes.)
