Quinoa (pronounced keen-wa) has been lauded as a
superfood in recent years. I've cooked it a few times now, and quite enjoy the flavour and texture. One person's superfood may be another's ethical dilemma though. Quinoa has long been a staple food in Latin America, and a Peruvian colleague pointed out that
demand from richer countries has pushed prices up so that people in places like Bolivia and Peru can no longer afford to eat it. It also clocks up a lot of food miles.
I had a packet of quinoa lying around in my pantry, and cooked it this week. Not sure whether to buy more. Suspect we should be eating local produce, rather than grains that have travelled all the way from the Andes ...
Wednesday night's dinner ... a 'risotto' of red quinoa, onions, carrots and broccolini
