Summer berry parfait
As a teenager I spent a couple of summers working at a raspberry farm. Everyone said I'd get sick of eating raspberries, but no, I can still eat them all day. There's no actual recipe for this dessert, it is more just a concept ... make of it what you will.
Yoghurt (plain or flavoured)
Fresh fruit (berries, or whatever is fresh and good)
Layer fresh, colourful, seasonal fruits with yoghurt in a tall glass. Serve with a long spoon.
I usually make this with home made Greek-style yoghurt, but you could use flavoured or sweetened yoghurt if you prefer. Suitable fruits include berries (raspberries, blueberries, blackberries, etc. etc.), kiwifruit, seedless grapes, puréed mango ... whatever you like.
