Now I don't usually bake using the microwave, but our three visitors Jiaying, Yang and Akihiro are heading back to Nagoya shortly and tell me they don't have access to an (Australian-style) oven! So here's a recipe that works in the microwave. Arigatō and sayōnara guys – and happy baking ;-)
1.75 cups flour
2 teaspoons baking powder
3 tablespoons cocoa (or 3 tablespoons coffee)
1.5 cups sugar
2 eggs
1 tablespoon vegetable oil
1 cup milk
0.5 teaspoon baking soda
125 g butter
Mix the flour, sugar and baking powder together. Melt the butter in a large jug for 1 minute on high. Warm the milk and mix the cocoa (or coffee) and baking soda into it. Add the eggs and oil to the melted butter and whisk well. Combine all ingredients together, and mix well. Pour the mixture into a lightly greased (microwaveable – so plastic, glass or silicone) baking dish and microwave for 10 minutes on high.
P.S. different microwaves have different power levels, so if you find it a bit too dry or rubbery the first time you make it, try cooking it for less time (e.g. eight minutes) next time ... good luck!
