Gingernuts

100g butter
1 tbsp golden syrup
1cup sugar
1 egg
200g flour
3tsp ground ginger
1 tsp baking soda

Melt butter in microwave or saucepan. Stir in rounded tablespoon of syrup. Remove from heat, add sugar and beaten egg. Beat with wooden spoon. Mix dry ingredients in bowl and add melted mixture. Line a baking tray with non-stick baking paper. Shape cool mixture into balls, space well on tray. Preheat oven to 180 degrees C and bake for 10 mins, turn each biscuit over with spatula and cook another 3 mins. Cool on wire rack and store in an airtight container.
